Grilled Pork Tenderloin

One of our last meals at home before jet setting, the chef made juicy grilled pork tenderloin. 

He served it over a bed of wild rice, goat cheese, sunflower seeds, and sauteed spinach. It was tasty and filling without over-stuffing us. It's a definite keeper from EMeals. 

Recipe from EMeals: serves 2
Ingredients:
1 Tbs olive oil
1 Tbs honey
2 tsp chili powder
1 1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
1 lb pork tenderloin

Preheat grill to medium heat (the chef used our George Forman because we don't have a grill)
Combine oil, honey, chili powder, cumin, salt, and pepper in a small bowl.
Rub mixture over tenderloin and grill for 20-25mins or until thermometer reads 145 degrees, turning once. Transfer to a cutting board. Let stand for 5mins before slicing

For side dish:
1 Tbs olive oil
5oz baby spinach
2 Tbs pine nuts toasted (used sunflower seeds)
1 oz crumbled goat cheese
2 tsp fresh lemon juice
Wild rice

Heat olive oil in a large skillet over medium heat. Add spinach, cook, stirring constantly, 2mins or just until wilted.
Season to taste with salt and transfer to a serving bowl. Sprinkle with pine nuts and goat cheese. Drizzle with lemon juice. Cook rice according to package.

Serve tenderloin over bed of rice and spinach. Enjoy!

London Calling

Hi, y’all! I’m Brittany from Life as the Mrs. Aileen asked me to guest post while she’s jet-setting
in Europe {so jealous!} and I was happy to oblige. I “met” Aileen when Kelly at Kelly’s Korner did
a link-up, and it’s been so fun getting to know her – and other bloggers – through that process.
Making blog friends is something I just love.

Just a little bit about me: I’m married to my husband of almost three years, Brandon, and we live
in a little suburb of Dallas with our crazy thinks-he-is-a-dog cat, Oliver. We just bought our first
house last September and are always busy making it “home.” I work for a local school district doing
communications, and Brandon is a business development manager for a recruiting firm. I recently
made my blog public after about three years of blogging…what a change! My blog is so random:
recipes, my favorite things, Oliver-isms and of course, my life as a wife.

I have been living vicariously through Aileen and her prepping-for-London posts; it is my favorite
city in the world! I studied abroad in London when I was in college for an entire summer, and
boy, was it the best summer of my life. Baylor University {my beloved alma mater} hosts a
fabulous study abroad program every summer called “Baylor in Great Britain.” When I heard about
the opportunity, I jumped at the chance – after sweetly talking my parents into it, swearing on
everything I’d take my studies seriously while overseas – and was packed about a month before
our plane was wheels up. {You think I’m kidding…}

But the only problem was, I didn’t have a roommate. When talking to my fellow sorority sisters
about it, one of them went to high school with one, who also coincidentally went to Baylor, and
promised she wasn’t a crazy psycho. Ha! I met the girl and thought, “Okay, she can be my
roommate. She’s normal. I like her.” Little did I know, we’d get along fabulously and become best
friends – and that she’d be in my wedding three years later. {Shout out to Laura!}

Anyway, a few months later, we boarded our British Airways flight from Houston to London Gatwick
to Rome {we spent a week in Italy before our time in London} and were off. That summer, we
explored. Baylor’s program made you take one three-hour class, but of course my parents made
me take two three-hour classes {ha!} and while I was frustrated with them at the time, it totally
worked out because I got to graduate from Baylor a semester early. We were up early every day
for the class, and then after lunch had the entire day to explore, eat and do whatever we want. The
only caveat was that we had to be back for class the next morning. {Side note: When I think about
my parents letting me jaunt all over Europe as a 20-year-old, I get so nervous and wonder if I’ll
ever let my kids do that. I think I’ve seen “Taken” one too many times!}


It was a totally different life than the one we live here. We walked everywhere we could and
eventually got to the point where we didn’t even need the map to get from Point A to Point B on the
tube. We wandered High Street Kensington, popping into TopShop, Jigsaw and H&M {there wasn’t
even one in the United States at that point!} and indulging in Wagamama…and of course having
alcohol any time we wanted because the drinking age there was 18! Ha! {Sorry, mom…}


We visited Buckingham Palace, Windsor Castle and even had a private tour of Westminster Abbey.
We spent our days at the British Museum; saw the Dead Sea Scrolls; ate crepes al fresco; saw
“Wicked” and “Les Miserables”; giggled every time we got on the tube and the lady’s voice said,
“Mind the gap!”; and shopped with every other tourist at Harrod’s and on Portobello Road.


Laura and I left Paddington Station and spent a weekend {following fellow boy students who we
thought were just soooo cute} in Scotland, watching the British Open; spending the night in a
“Harry Potter”-esque attic room; and wondering if we were ever going to get warm with the cold
rain constantly falling.


Our dorm at Imperial College was right next to Royal Albert Hall, Kensington Palace, Hyde Park
and Knightsbridge. We walked by famous sites and almost took it for granted, I think! We would
buy Ben & Jerry’s ice cream from a local little convenience store and would eat it with wooden
spoons while wandering the streets and planning how we could move to London. {Leaving that city
from London Heathrow was the hardest thing I’ve ever had to do.}

We wish every single day we could go back, and will even text each other randomly to this day with
funny inside jokes from our trip that only we understand.


If you ever have a chance to visit the beautiful city of London, I’d suggest you do. It’s a city that will
always hold a special place in my heart, and one I can’t wait to travel back to with my husband.

Savannah Eats

Last week was a bit hectic and I didn't have a chance to share with you our Savannah eats, so I thought I'd share them for Taste of Tuesday instead of the usual recipe. I hope that's ok with Ashley and Jessica

Even though it was a rainy weekend, we trekked through the water to find some great food spots. The first night, we tried Elizabeth on 37th. The food was excellent even if the atmosphere was a little stuffy and needed a younger crowd. 

I tried two appetizers for my entree: the tomato, pesto, mozzarella salad, and the shrimp parmesan boat. Both were very tasty. 


We stopped by a few bars before topping the night off at Lulu's Chocolate Bar where each of us ordered different delicious desserts with tall cold glasses of milk. The peanut butter chocolate pie was incredibly rich (aka I had to work it off at PB the next day) but I ate almost the whole piece. by. myself. 


Mallory introduced me to macaroons on this trip. She found a cute macaroon shop online with fabulous reviews and it did not disappoint. I might end up eating my weight in macaroons while we're in Paris! 


The second night, we tried Boar's Head Grill and Tavern a more casual spot located along the River Walk. I enjoyed a juicy burger and fries before I was surprised with a birthday cake from my sweet friends. Amy ordered a strawberry and chocolate cake. It was unbelievable.
I brought it home and proceeded to eat a piece for breakfast after my night shifts last week.

Needless to say, it was a fabulous weekend full of friends, food, and fun! You should definitely put Savannah on your list of places to visit even if just for food alone.

Birthday and Mother's Day!

Thank you so much for everyone who linked up and shopped last week! It was so much fun to shop other blogger's closets. 

We had such a great, relaxing weekend at home. Not to sound like oldies but sometimes it's nice to stay home and rest. 

My mom and sister came into town and spent the night with us on Thursday. I pulled myself out of bed early in the afternoon (post night shift), so E and I could soak up some sun and chat poolside. 

Mom surprised me with these beautiful spring flowers, birthday banners, and a mountain of cutely wrapped, early birthday presents. She also made the most delicious white cake with mocha frosting. (I have been eating my way through it ALL weekend!) She knows me well! 


We also celebrated HER by making English muffin french toast topped with strawberries and presents for Mother's Day. It was so much fun celebrating what a fabulous mom she is.

Saturday, I spent the morning and early afternoon at the pool, while the chef golfed and got groceries. We loved church this weekend and as always, was challenged by the message. Afterwards, we ate a delicious dinner at Lilly's Pizza in Durham before meeting co-workers at a birthday bash at Fullsteam. It was so much fun going out with them, and I can't wait to spend time again outside of the hospital.

I found and purchased the cutest carryon for our trip but unfortunately it is way too small for a carryon, and there isn't a larger size. Bummer. So, I'm going with the boring neutral black carryon. And the packing has begun! Our guest bedroom is a staging area so that I don't forget anything.

I hope the next three days go by quickly because I only have three shifts before vacation!! Come on Friday!

Savannah Weekend with Besties

I want to slow time down and go back to this weekend. We met up with two of my besties and their men in Savannah for a weekend stay in a historic house all together. 

I absolutely love seeing them and the last time we were together was in December for Mallory's wedding. (on the left) I love planning and going on trips with these two, and this time it was even more fun because the men were along for the ride. 

 They were definitely a good time!

The boys dodged rain showers to play golf, while we went to a Pure Barre class, shopped, and found dainty macarons.

It was a fabulous but too-short weekend, and we're already planning our next trip.
